Holy w o w!! This was fantastic! I served it on top of a spinach and arugula salad with a little parmesan and lemon juice. I used shallots instead of onions but either would taste fine.

2 tablespoons olive oil

1 pound Italian sausage

2 medium onions, cut into wedges

Kosher salt and pepper

2 small red bell peppers, seeded and sliced 1/4 inch thick

3 cloves garlic, thinly sliced

2/3 cup dry white wine (such as Sauvignon Blanc)

6 sprigs thyme

1 pound store-bought cooked polenta, sliced into thick rounds

Crusty bread (optional)
