  • a handful basil , leaves roughly chopped
  • 200.0g cherry tomatoes , halved
  • 20 pitted black olives , sliced
  • a squeeze lemon juice
  • 4.0 tbsp olive oil
  • 3 anchovies , in olive oil
  • 4 large red mullet (about 300g each), scaled, boned and butterflied
