1 large onion, peeled and diced

1 tbsp olive oil

6 cremini (or white) mushrooms, thinly sliced

1/2 C acorn squash, sliced

2 cloves garlic, peeled and minced

1 lb ground dark turkey meat

1 1/2 tsp poultry seasoning (or dried sage)

1 tsp sea salt

1/4 tsp ground black pepper

1 1/2 C low sodium chicken stock

1 C quinoa, rinsed

1/4 C parsley, minced

6 oz reduced fat monterey jack cheese, shredded
