Stir-fried Rice Noodles With Vegetables

18 Ingredients

  • 7 ozs thin rice stick noodles (check the Asian section of your grocery store)
  • 3 garlic cloves minced
  • 1 Tbsp chopped ginger
  • ½ cup sliced scallions
  • 1 cup sliced mushrooms (shiitakes are great)
  • 1 medium carrot peeled and sliced very thin
  • 3 cups green vegetables, chopped (like bok choy, cabbage, sliced snow peas, sprouts or spinach)
  • 2-3 Tbsps vegetable oil
  • 3 eggs
  • 1 tsp soy sauce
  • 1 tsp sesame oil
  • 2 Tbsps soy sauce
  • 2 Tbsps hoisin sauce
  • 1 Tbsp seasoned rice vinegar
  • 1/2 cup stock (vegetable or chicken)
  • Optional garnishes: * Chopped fresh herbs like cilantro, mint and basil
  • Optional garnishes: * Lime for squeezing
  • Optional garnishes: * Hot sauce for heating
