Ingredients for 6 servings

7 ounces thin rice stick noodles (check the Asian section of your grocery store)

3 garlic cloves minced

1 tablespoon chopped ginger

½ cup sliced scallions

1 cup sliced mushrooms (shiitakes are great)

1 medium carrot peeled and sliced very thin

3 cups green vegetables, chopped (like bok choy, cabbage, sliced snow peas, sprouts or spinach)

2-3 tablespoons vegetable oil

3 eggs

1 teaspoon soy sauce

1 teaspoon sesame oil

2 tablespoons soy sauce

2 tablespoons hoisin sauce

1 tablespoon seasoned rice vinegar

1/2 cup stock (vegetable or chicken)

Optional garnishes: * Chopped fresh herbs like cilantro, mint and basil

Optional garnishes: * Lime for squeezing

Optional garnishes: * Hot sauce for heating
