Ingredients for 6 servings

4 1/2 oz medium-grain bulgur (3/4 CUP)

3 lrg lemons juiced or (more to taste)

1/4 tsp ground cumin (1/4 to 1/2)

1 x garlic clove minced or put through a press

4 bn flat-leaf parsley (enough to make 4 cups chopped)

1 bn fresh mint

4 x scallions (to taste) (4 to 5) both white and green parts thinly sliced or chopped

1 sm cucumber peeled and diced

1 cup cooked chickpeas (if using canned chick-peas - drain and rinse)

3 x tomatoes chopped

1 tbl olive oil (optional) romaine lettuce leaves to use as scoops
