1/2 cup thinly sliced shallots

Pinch of hot red pepper flakes

1 pound baby bok choy, cut diagonally into 1-inch strips then washed well

Salt to taste

2 tablespoons Chinese black beans (see Note)

1 tablespoon soy sauce

20 ounces firm tofu, trimmed and cut into 1 1/2-inch cubes

1 cup low-sodium vegetable or chicken broth

2 teaspoons cornstarch mixed with 1 tablespoon water
