  • 2 lb chicken breasts, boneless and skinless
  • 2 tsp papaya paste
  • 1/2 tsp baking powder
  • 1 1/2 tsp red chili powder
  • 1 tsp Kosher salt (or regular salt)
  • 2 tsp ginger garlic paste (click on the link for the recipe)
  • 2 x jalapeños, sliced
  • 2 x cloves garlic, finely minced
  • 2 Stalks lemongrass
  • 1 tbsp mushroom salt seasoning (or salt)
  • 1 1/2 tbsp granulated sugar
  • 3 tbsp Canola Oil
  • 3/4 tsp turmeric powder
  • 2 x shallots, finely chopped
  • 1 x yellow onion, cut into small wedges
  • 2 tbsp coconut milk (optional)
  • 1/3 cup chicken stock as needed
  • 1 tbsp Nuoc Mam (optional)
  • 3/4 tsp black pepper, freshly ground
  • Juice of 1 lemon
  • Thai basil (I used African basil), for garnish
  • 4 x sprigs cilantro, for garnish
