Ingredients for 8 servings

2 lb chicken breasts, boneless and skinless

2 tsp papaya paste

1/2 tsp baking powder

1 1/2 tsp red chili powder

1 tsp Kosher salt (or regular salt)

2 tsp ginger garlic paste (click on the link for the recipe)

2 x jalapeños, sliced

2 x cloves garlic, finely minced

2 Stalks lemongrass

1 tbsp mushroom salt seasoning (or salt)

1 1/2 tbsp granulated sugar

3 tbsp Canola Oil

3/4 tsp turmeric powder

2 x shallots, finely chopped

1 x yellow onion, cut into small wedges

2 tbsp coconut milk (optional)

1/3 cup chicken stock as needed

1 tbsp Nuoc Mam (optional)

3/4 tsp black pepper, freshly ground

Juice of 1 lemon

Thai basil (I used African basil), for garnish

4 x sprigs cilantro, for garnish
