  • 3.0 tbsp crushed coriander seeds
  • a small bunch dill , chopped
  • 2 oranges zested and juiced
  • 3 lemons , zested and juiced
  • 1 side salmon fillet , approx 900g, skin on
  • 500.0g coarse sea salt
