Ingredients for 4 servings

8 to 10 American lamb rib chops, about 2 pounds, cut 1 to 1 1/2 inches thick

1 cup yogurt, drained in a cheesecloth-lined strainer or coffee filter for 2 to 4 hours, can substitute for 1 cup sour cream or creme fraiche

1/4 cup malt vinegar

1 lemon, juiced

8 cloves garlic, peeled and finely minced

1 [3-inch] piece fresh ginger, peeled and grated

1 tablespoon garam masala

1 tablespoon cumin, toasted

1 teaspoon ground cardamom

1/2 teaspoon cayenne pepper

1/4 teaspoon ground mace

1/4 teaspoon ground nutmeg

2 tablespoons canola oil

3 tablespoons unsalted butter, melted
