8 in number schezuan pepper corns

250 g peeled cored and quartered conference pears

Juice of half a lime

Small pinch of saffron

6 wonton wrappers

40 g skinless and boneless diced mackerel

50 g scallop flesh

60 ml double cream

Salt and freshly cracked black pepper

1 tbs finely sliced spring onions

1 tbs chopped coriander

Dash of fresh Lime Juice

6 baby bok choy

20 g unsalted butter

100 ml fish stock

2 Mackerel fillets, pin bones removed

10 g table salt

10 g caster sugar

1 tsp unsalted butter

1 tbs sunflower oil
