vinegar

1/2 flat of uni (about 1/4 C)

2 Tbs butter at room temperature

1/4 C cream

1 tsp kosher salt

1/2 lbs yukon gold potatoes roughly uniform in size

1 tsp water

1 egg yolk

1/4 C butter cut into small cubes

1 tsp – 1 Tbs Yuzu juice

1/4 tsp yuzu kosho

pinch of sugar

salt to taste
