  • 1/2 tsp ground turmeric
  • 1/2 tsp pure chile powder
  • 1 carrot, cut into 1/4-inch dice
  • 1 zucchini, cut into 1/2-inch dice
  • 1 tomato, cut into 1/2-inch dice
  • Salt
  • 1 cup quinoa, rinsed and drained several times
  • 1/2 cup chicken stock
  • 1 bay leaf
  • 1/4 cup chopped mint
  • 1/4 cup chopped flat-leaf parsley
  • Freshly ground pepper
