2 teaspoons curry powder

Cucumber-Mint Raita

Freshly ground pepper, to taste

3/4 cup fine dry breadcrumbs

1/2 cup Cucumber-Mint Raita, optional (recipe follows)

6 teaspoons extra-virgin olive oil, divided

Lettuce & sliced cucumber, for garnish

3/4 cup raw cashews
