3 oz roasted or grilled chicken breast

1/2 mango, peeled and sliced

1 slice red onion

2 tbsp chopped cilantro

SALAD:

3 cups bagged baby spinach leaves

1/2 cup canned mandarin orange slices, drained

2 tbsp diced red onion

1 tbsp dried cranberries

2 tbsp balsamic vinegar

dash of extra virgin olive oil (less than 1 tsp)
