110.0 g unsalted butter, softened and cut into cubes, plus extra for greasing

2.0 ripe medium bananas

2.0 Bramley apples, peeled and cored

1.0 tsp Fairtrade ground cinnamon

1.0 rounded tsp baking powder

110.0 g plain white flour

110.0 g wholemeal flour

Grated zest of 1 orange and 1 lemon

175.0 g Fairtrade dark brown soft sugar

2.0 large free-range eggs, lightly beaten

100.0 g dried ready-to-eat figs, chopped

50.0 g Medjool dates, stoned and chopped

175.0 g shelled walnuts, roughly chopped
