1 package mung bean noodles (6 oz.)

1 lb good quality medium-to-large fully-cooked shrimp

1 pkg (mine was 12 oz and had more than enough) spring roll rice paper wrappers

1 head romaine lettuce, torn from “stem”

1 loose C (+/-, to taste) cilantro leaves

6+ medium carrots, peeled and shredded

1/2 C tamari soy sauce

1/2 C rice vinegar

2 tsp. sesame oil

2 T honey

1 heaping tsp. minced garlic

1 T finely grated fresh ginger

1 tsp. minced green onion
