This was a great way to make eggplant an entree but if there's a next time we wouldn't add as much lime zest. It was way too citrusy.

1 large eggplant

2 tablespoons rice vinegar

1 tablespoon toasted sesame oil

1 tablespoon honey

zest of 1 lime

1 tablespoon lime juice

1 tablespoon water

3 tablespoons white miso

chopped fresh cilantro

togaroshi, optional
