1 1/2 cups buttermilk

4 teaspoons active dry yeast

3 tablespoons granulated sugar

4 to 4 1/2 cups bread flour, plus about 1 cup extra for flouring the work surface

1/2 teaspoon baking soda

1/4 teaspoon salt

Canola oil for frying

Powdered sugar for serving, a lot… about 2 to 3 cups
