I made this dish and it was delicious. I didn't use red lentils because I only had regular lentils on hand so I needed to adjust the cooking time (took longer to soften up). But it was still delicious. I would definitely make this again. My 21 m

Ingredients for 6 servings

Vegetable oil or grapeseed oil

2 tsp cumin seeds

2 tsp black or yellow mustard seeds

1 medium onion, finely diced

1 1/2 inches fresh ginger, peeled and minced

2 x garlic cloves, minced

1 x jalapeno chile, seeded, finely chopped

1 1/2 tsp curry powder

2 tsp ground cumin

1 tsp turmeric

Pinch of chile powder

1 tbsp tomato paste

2 cup red lentils

2 x cinnamon sticks (or 1, if large)

2 cup water

1 15 oz can “lite” coconut milk

Sea salt

Juice of 1 lemon

A bunch of mint, chopped

A bunch of cilantro, chopped
