1 cup apple cider

1 vanilla bean, split

2 slices of bacon, cut into 1/2 -inch dice

1 cup dry white wine

2 shallots, thinly sliced

1 tablespoon white wine vinegar

8 whole black peppercorns

2 small tarragon sprigs, leaves removed, stems reserved

1/2 bay leaf

1 tablespoon vegetable oil

Two 6-ounce salmon fillets with skin

Salt and freshly ground pepper

4 1/2 tablespoons cold unsalted butter, cut into pieces

1 tablespoon minced chives
