1 large cauliflower , cut into small florets

1 tablespoon garam masala

1 cup vegetable stock or chicken stock

1/2 teaspoon white pepper (optional)

3 medium baking potatoes , peeled and chopped into 1/2-inch- 3/4-inch chunks

1 teaspoon ground cumin

1 medium hot green chili pepper , minced

5 garlic cloves , minced

1 cup frozen green pea

2 teaspoons ground coriander

1/3 cup fresh cilantro , chopped

2 tablespoons fresh ginger , grated (including juice)

1 teaspoon cumin seed

2 teaspoons turmeric

1 teaspoon fenugreek seeds

4 tablespoons olive oil or ghee or clarified butter

1/2 lemon, juice of

2 large onions , chopped into 1/2-inch chunks

2 tablespoons fresh ginger , peeled and finely minced

1 teaspoon salt
