2 cups whole milk

5 large egg yolks

1/3 cup sugar

one-finger pinch sea salt

1 cup heavy cream

1/3 cup pumpkin oil

3 tablespoons sugar

2 tablespoons water

1/4 cup shelled toasted pumpkin seeds
