Yum yum. Added white pepper, more thyme and garlic, ham instead of pancetta, and some lemon juice! Absolutely delicious! Added more cayenne as well, my husband likes things spicy!

Made this the other night. Needed some extra seasoning... However the overall flavor was a good starting point. If you like a thick and creamy chowder this isn't it.

Ingredients for 8 servings

6 lb. littleneck clams, rinsed well

6 oz. pancetta, diced

3 Tbs. unsalted butter

1 yellow onion, diced

2 celery stalks, diced

2 garlic cloves, minced

2 tsp. chopped fresh thyme

2 Tbs. all-purpose flour

2 lb. Yukon Gold potatoes, peeled and diced

2 bay leaves

1 cup heavy cream

2 tsp. Worcestershire sauce

Salt and freshly ground black pepper, to taste

Pinch of cayenne pepper

1 Tbs. chopped fresh chives (optional)
