3 large carrots, peeled and coarsely chopped, plus 1 carrot for garnish

1 inch long piece ginger, peeled and chopped

1/4 cup chopped shallots

1/4 cup rice wine vinegar

2 tbsp white miso paste (optional)

1 tbsp soy sauce

1 tbsp sesame oil

1/8 tsp kosher salt

1/2 cup olive or canola oil

1/4 cup water

1 head iceberg lettuce, coarsely chopped

1/2 cucumber, sliced
