3/4 cup diced fresh mozzarella cheese (about 3 ounces)

1/4 teaspoon fresh ground black pepper or tricolor pepper , to taste

1 cup uncooked couscous

2 cups diced tomatoes

1/2 teaspoon salt , to taste

1 garlic clove , crushed and minced

1/4 cup chopped fresh basil

1 1/4 cups water

2 teaspoons extra-virgin olive oil

3 tablespoons minced shallots

1/4 teaspoon lemon juice or balsamic vinegar (white balsamic or champagne vinegar okay)

basil leaves , for garnish (optional)
