1/4 teaspoon ground nutmeg

1/8 teaspoon freshly ground black pepper

1 (15-ounce) container part-skim ricotta cheese

1 (6-ounce) package refrigerated grilled-flavored chicken breast strips, finely chopped

Cooking spray

2 ounces very thinly sliced prosciutto or ham (4 slices), each cut in half crosswise
