1 tsp salt

1/2 tsp ground turmeric

1/2 tsp sugar

1/2 tsp ground garam masala

1-in (2.5-cm) piece fresh ginger root, finely chopped

2 tbsp ghee 2 tbsp ghee

1 tsp fennel seeds

pinch of asafetida

vegetable oil for frying

2 tbsp corn oil

2 tbsp cumin seeds

4 cloves

1 onion, finely chopped

7 oz (200 g) plain Greek-style yogurt

2 tbsp ground coriander

1/2 tsp red chili powder

salt and sugar, as needed

2 green chilies, stem removed and quartered

2-in (1-cm) piece fresh ginger root, julienned

2 tbsp chopped cilantro leaves

juice of 1/2 lemon
