Ingredients for 4 servings

1.0 tbsp vegetable oil

1.0 tbsp Thai fish sauce

1.0 tsp light brown soft sugar

200.0 g baby aubergines, cut into chunks

100.0 g new potatoes, quartered

225.0 g tin bamboo shoots

200.0 g cooked turkey, shredded

175.0 g mixed baby corn and mangetout

steamed rice, to serve

1.0 bird eye chilli

2.0 cm piece of ginger, chopped

2.0 lemongrass stalks, chopped

4.0 shallots, chopped

4.0 garlic cloves

4.0 dried makrut (kaffir) lime leaves

0.5 tsp shrimp paste

1.0 tbsp groundnut oil
