Very easy to make and tasty. The recipe calls for 2 cups or 2 cans ( which would be 4 cups) of beans...definitely do 2 cups. Also the prep is not available but all you have to do us throw everything into a processor.

Ingredients

1 clove garlic

2 cups cooked Cannellini Beans, (or 2 15-ounce cans, drained and rinsed)

1 cup jarred roasted red pepper, drained or 2 fresh red peppers, roasted, recipe follows

3 tablespoons olive oil

4 tablespoons asiago cheese, grated

2 to 4 tablespoon chicken stock

2 teaspoons lemon juice

1/2 teaspoon salt

4 leaves basil, chiffonaded

Fresh Vegetables for serving

Crackers for serving

Bread Sticks for serving
