250.0g Maldon sea salt

1 filleted side of very fresh salmon - weighing about 900g

zest 3 oranges

100.0g mixed baby salad leaves and extra virgin olive oil, to serve

50.0g freshly grated horseradish or 85g creamed horseradish

zest 1 lemon

juice ½ lemon
