Ingredients

Portobellos:

2 tablespoons extra virgin olive oil

2 tablespoons tamari soy sauce

2 teaspoons coarsely ground black pepper + more to taste

4 medium portobello mushrooms, stems removed

Caramelized fennel and onion:

1 tablespoon extra virgin olive oil

1 large red onion, sliced into thin crescents

1/2 large fennel bulb, thinly sliced

1/2 teaspoon unrefined sugar or agave nectar

1/4 cup dry red wine

1 tablespoon balsamic vinegar

-- Salt and pepper to taste

Caper aioli:

1/2 cup vegan mayonnaise

2 teaspoons chopped capers

1 teaspoon whole grain mustard

1/2 teaspoon minced garlic

1 tablespoon minced fresh oregano leaves

2 tablespoons minced parsley leaves

1 teaspoon finely minced lemon zest

Sandwiches:

4 torpedo rolls or other similar type roll, halved lengthwise

-- Black pepper to taste

1/2 cup Smoked Pecan "Cheese" (see recipe in article link) or purchased nut pate, or a small amount of hummus

-- Romaine or Little Gem lettuce leaves

-- Pickles or lightly marinated vegetables, for garnish (optional)
