Ingredients for 4 servings

1 large onion, chopped

6 to 8 cloves garlic, minced

2 teaspoons olive oil

3/4 teaspoon chili powder

1 teaspoon oregano

1 bay leaf

1 to 2 teaspoons cumin

1/4 cup chopped fresh cilantro (optional)

Sour cream (optional)

Lime wedges

Corn tortillas

Roasted squash or pumpkin seeds

2 to 3 pounds bone-in chicken thighs. (You could use boneless, or even breasts, but then you don't get the skin and bones.)
