  • 2 slices bacon, chopped
  • 1/2 onion, chopped
  • 1 clove garlic, minced
  • 1 small stalk celery
  • 1 can (14 oz?) chicken broth
  • 1 can (16 oz?) cannelini beans, rinsed and drained
  • 1 can (16 oz?) whole tomatoes, drained and chopped
  • 1/2 tsp dried oregano
  • 1/2 cup dittalini
  • 2 Tbsps fresh parsley, minced
  • grated Parmesan

Definitely not gluten-free as posted. Just add some gluten-free pasta and you'll have a great recipe...

Um...this soup is NOT gluten free! It has pasta in it! I will be making it though...looks awesome.

Grew up eating this soup. My grandmother would make it Friday's. Some people use a ham bone with little pieces of ham for a richer falvor. It's all good!

This was a staple in my husband's family when they were kids (5 boys 2 girls) and he has tried several times, to tell me how to make it but it's never quite right (according to his memory). His father made it for them (dad was from sicily) and he has since passed on so I cannot get his recipe. This is as close as I've come to actually recreating the recipe of my hubby's youth! Thank you! BTW, I added spinach and it's wonderful! I want to try it with a little sausage (hubby's addiction) next time.
