2 small sprigs fresh thyme


6 ounces bacon, preferably apple wood-smoked, cut crosswise into strips about 1 inch by 1/4 inch

1 large bunch mustard greens, washed, stems removed and very roughly cut (about 12 cups loosely packed)

2 tablespoons sherry vinegar, preferably aged

4 slices of good-quality country white bread
