1/2" to 1" fresh ginger (enough to make 1 Tbsp grated)

4 large carrots, peeled, cut in 1 inch chunks, and boiled.

1 1/2 tsp. cumin powder

3 Tbsp. red wine vinegar

3 Tbsp. olive oil

1/2 tsp. cayenne pepper (or to taste)

1/8 tsp. cinnamon
