  • 2 tbsp Unsalted Butter
  • 2 tbsp Olive Oil
  • 1/2 cup chopped celery
  • 1/2 cup chopped carrot
  • 1 cup chopped yellow onion
  • 3 x 2″ pieces of parmesan rind
  • 4 cup vegetable or chicken stock
  • 5 cup freshly shelled peas or 2 (10-oz) packages frozen peas
  • 1/4 cup fresh lemon juice
  • Salt & Pepper to taste
