Ingredients for 12 servings

1 tbsp clarified butteror beef tallow

4 oz bacon, chopped fine

1 lb beef stew meat

6 x shallots, peeled and chopped fine

1 large leek, white parts only, sliced thinly

5 x carrots, peeled and chopped

5 Stalks celery, chopped

1 lb fingerling potatoes, kept whole if small, chopped if large

2 lb mixed mushrooms

2 x bay leafs

1 small bunch fresh thyme

2 cup dry red wine

3 quart homemade beef stock

1 small bunch fresh parsley, trimmed and chopped

unrefined sea salt and black pepper, to taste
