1 cup nonfat vanilla yogurt, drained for 4 hours in a cheesecloth-lined sieve in the refrigerator

1 1/2 teaspoons freshly grated orange zest

1/2 cup buttermilk

1 cup part-skim ricotta cheese

1 tablespoon butter
