1 yellow bell pepper , seeded, deribbed, and finely chopped

1 bunch marjoram

1 tablespoon tequila

1 red bell pepper , seeded, deribbed, and finely chopped

1 tablespoon Grand Marnier


1/4 orange , juiced

1 tablespoon finely minced shallot

BBQ Sauce

1 tablespoon whole coriander seed

1 pinch ground coriander

salt and pepper

1 bunch basil

2 sprigs basil , chopped

3 blue corn tortillas , cut into thin strips and crispy fried

1 bunch cilantro

2 sprigs marjoram , chopped

Pepper Relish

6-8 ripe tomatoes , diced

1/4 cup olive oil

1 tablespoon finely minced garlic

2 tablespoons beef demi-glace

1/2 cup red wine vinegar

1 cup cooked black beans

1 bay leaf

1 bulb of garlic (cut in half across the clove)

1/2 lime , chopped

1/4 lime , juiced

1 cup molasses

2 sprigs cilantro , chopped

1 tablespoon champagne vinegar

1/2 orange , chopped

1 cup cabernet sauvignon wine or dry red wine

kernels cut from 2 ears of corn

2 tequila sunrise chilies , seeded, deribbed, and finely chopped

2 tablespoons mixed peppercorns

1 jalapeno chili, seeded and diced

1/3 cup olive oil

1/2 lemon , chopped

1 tequila sunrise chili pepper , seeded and diced (or 1-inch 2 small serranos or 1 jalapeno, can be substituted)

2 sprigs thyme , chopped

1 red bell pepper , seeded, deribbed, and diced

1 medium onion , peeled and sliced

1/2 bunch parsley , chopped
