½ package frozen filo pastry

¾ cup hazelnuts

18 to 20 baby artichokes or 6 large ones

2 tablespoons parsley , chopped

2 tablespoons butter

3 tablespoons virgin olive oil

Pinch if dried thyme

Juice of two lemons

8 tablespoons melted unsalted butter or a mixture if butter and olive oil

½ cup water or white wine

1 yellow onion , diced into ¼-inch squares

3 cloves garlic , finely chopped

1 cup ricotta

Salt

1 teaspoon tarragon , chopped

2 eggs , beaten
