1 1/2 cups light brown sugar , packed

3 lemons, juice and rind of

12 cups ice

2 celery ribs

2 cups low sodium chicken broth

1 (24-26 lb) whole turkey, neck, heart and gizzard removed

2 cups kosher salt

6 tablespoons earl grey tea (18 tea bags)

6 1/2 quarts water

3 whole lemons , punctured all over with a fork

1 large onion , unpeeled and quartered

1/4 cup olive oil

6 fresh rosemary sprigs
