1 small onion, cut into 1/2 inch thick slices

2 x garlic cloves, thinly sliced

Olive oil

1 tsp ground coriander

1 1/2 cup water

4 tbsp heavy cream

4 tbsp fresh lemon juice

2 tsp salt

4 tbsp finely chopped mint, or to taste
