6 ounces salted butter

1 tablespoon fresh rosemary, chopped

1 tablespoon fresh thyme, chopped

4 tablespoons ice water

1 bunch rainbow chard

1 bunch green onions

2 tablespoons fruity olive oil

1/2 teaspoon quatre épices or nutmeg

1/2 cup crème fraîche

1 cup heavy cream

2 whole eggs

4 egg yolks
