1 pound basmati rice (2 1/2 cups)

-- Kosher salt

3 pounds fresh fava beans in the pod (about 3 cups shelled), or 1 pound frozen fava beans (see Note)

1/4 teaspoon turmeric

3 bunches fresh dill, washed, stemmed and minced

1/4 cup dried dill (optional)

1/4 cup olive oil

1 stick butter (8 tablespoons), melted

1/4 teaspoon ground saffron + 1 to 2 tablespoons boiling water

-- Poached Lamb Shanks (see recipe)

-- Plain yogurt, for serving (optional)
