Ingredients for 16 servings

2 lbs great northern beans, soaked overnight

1 lb pork sausages (mine were maple sausages from Tamarack Hollow Farms)

1 ham hock, about 2 lbs (maple-cured from Tamarack Hollow Farms)

4 oz. bacon, finely chopped

1 lb pork shoulder, skin trimmed but bones and fat retained, and cut to 1-inch cubes

about 4 cups apple cider

2 cups applesauce (homemade or store-bought)

1/2 cup dry sherry

1 celery rib, finely chopped

1 carrot, finely chopped

2 medium yellow onions, finely chopped

2 ripe plum tomatoes, chopped

1 head of garlic, minced

1 bunch thyme

4 fresh bay leaves

3/4 cup fresh breadcrumbs (from white bread, pulsed in a food processor for a few seconds)

1/2 cup slivered almonds

2 tablespoons olive oil

salt and black pepper
