Chowder assembly

1 tablespoon canola oil

1 cup diced white onion

1/2 cup diced celery

1 cup peeled and diced baking potato

1 1/2 cups kombu broth

Cashew cream

Smoked king trumpet mushrooms


1 teaspoon lemon juice, more to taste

1/2 teaspoon Tabasco or other hot sauce, more to taste

2 teaspoons kosher salt, more to taste

1 teaspoon pepper, more to taste


1 tablespoon small hickory chips

1 heaping cup diced king trumpet mushrooms

4 cups whole raw cashews, rinsed under cold water
