Ingredients for 4 servings

2 tsp canola oil

2 Tbsp lite soy sauce

1 pkg (4 oz) lowfat extra-firm tofu, patted dry, cut into -in. cubes

1 cup frozen shelled edamame

2 medium red peppers, sliced

1 pkg (3.5 oz) sliced shiitake mushrooms

3/4 cup water

1/4 cup fresh orange juice

1/4 tsp crushed red pepper flakes

1 bunch asparagus, cut in pieces

1/2 cup sliced scallions

Garnish: toasted sesame seeds

1 tsp grated orange zest

2 tsp each minced garlic and fresh ginger

1 1/2 tsp cornstarch
