3 thyme sprigs, leaves removed and chopped

1 quart chicken stock

Salt and freshly ground black pepper

3 tablespoons butter

3 tablespoons flour

1 box buttermilk biscuit mix, such as Jiffy brand

1/4 cup flat leaf parsley (a handful), chopped
