Ingredients for 32 servings

4 cups spinach, lightly packed, coarsely chopped

4 x Large dried shiitake mushrooms, reconstituted and liquid reserved, stemmed, and chopped

1/4 tsp salt

1/4 tsp white pepper

3/4 tsp sugar

1 1/2 tbsp Light soy sauce

2 tbsp sesame oil

2 tbsp Canola oil

3 pz Brown pressed tofu, finely chopped

2 tsp cornstarch, dissolved in 1 tablespoon water

1/2 cup Chopped Chinese chives or scallions, white and green parts

1 lb Basic Dumpling Dough

1 tbsp Water

1 tbsp ginger, finely minced fresh ginger

1/3 cup carrot, finely chopped

2/3 cup Tangy soy dipping sauce
