Ingredients for 2 servings

4 cups mixed flavourful greens (arugula, endive, radicchio, escarole)

1/2 cup dry white wine (use the same wine you will serve with dinner!)

3 tablespoons Balsamic vinegar

2 inch slices bacon slided into 1 ½ pieces

1 pear (1/2 each serving)

1 cup water

1 medium shallot diced finely

1/8 teaspoon ground cardamom

2 tablespoons extra virgin olive oil

1/8 cup chopped nuts

1 tablespoon brown sugar (if pears are sweet, no need to add a lot of sugar!)

1 teaspoon Dijon Mustard

6 dates, pitted and chopped coarsly
